The garde-manger is in charge, as its name suggests, to provide the other parts with goods ready for cooking or any other preparation. He practices the deboning and theportioning of meat, the preparation of poultry, prey fish, crustaceans, and ensures the storage of these goods in cold rooms or in the pantry. He also prepares cold dishes, which he seasoned and presents with care and precision: appetizers, salads, cold lobster or lobster, jelly dishes, mixed vegetables, etc.
